365 by Whole Foods Market, Organic Whole Milk, 128 oz

I am French and came to the U.S 40 years ago. In my days, in France, the milk was not ultra-pasteurized. I think all of Europe. We will buy our pasteurized milk every day. In England, the milkman will deliver milk every day also. Unthinkable to keep milk for 2 weeks, or even 5 days or 3 days!When I came to the U.S. and I swallowed my first sip of milk, I immediately spit it back out. Phew! This is not milk! Americans do not realize what terrible bad taste ultra-pasteurization gives to the milk, because it's all they know. It's like some weird burned taste.Surely, after 40 years, I got used to this kind of ultra-pasteurized milk that keeps for an unbelievable 3 or 4 weeks???? Seriously, does this sound "natural" to you????So I am ravished to find again some NORMAL NATURAL milk, not ultra-pasteurized. I read that some reviews complained that the milk does not taste like what they are accustomed to, and I surely understand why. And, yes, of course, it does not keep for 1 month. That's exactly what makes it NORMAL and DELICIOUS.I like making my own curd (by adding citric aid to boiling milk), and buttermilk, and I do get lots of curd out of this 365 organic gallon, more than from the other typical organic grass-fed ultra-pasteurized milk I use to buy recently. And the buttermilk is also way more thick and creamy. So this indicates to me that this is a very high-quality milk, the most natural and normal you can possibly find.Merci Whole Foods
